If you have an overabundance of leftover Easter eggs this year, and let’s be honest, of course you have an overabundance of leftover Easter eggs, you can use them in plenty of ways so they won’t go to waste. And not just as a snack in your lunch box…or egg salad…

Here are 11 tasty and creative ways to use up your leftover hard boiled eggs!

Cobb Salad

Once of my personal favorites, this is an easy way to use hardboiled eggs, as it barely requires any cooking. Just get the salad ingredients you want — lettuce, tomato, avocado, and some bacon. Slice your hard-boiled eggs and add them to the salad mixture. It’s perfect for lunch. Make it extra hearty with a little rotisserie chicken on top, too.

Guacamole Stuffed Eggs

This recipe for guacamole stuffed eggs is a fun twist on deviled eggs. Avocado and a little cilantro really make these eggs taste like there is guacamole in them! And I don’t know about you but I’m team guacamole on everything!

BLT Egg Salad Sliders
