10 Favorite Breakfasts in 10 Minutes or Less

Before I had my daughter, the average morning consisted of the following routine – shower, get dressed, hair/makeup, leisurely breakfast while reading the news, stop for a latte on the way to work, arrive at work 10 minutes early.

Now, my morning is more like – Sneak into the bathroom as quietly as possible to not wake the sleeping toddler, turn on water, hear “Mama” screamed from the next room, shower anyway as fast as possible,  grab toddler from crib while she screams “Towel! Towel! Towel!” as she tried to yank the towel off my head, get her dressed while she screams “No pants!,” attempt to do makeup with toddler in lap, remove eyeliner from toddler’s face, don’t even bother drying hair,  try to provide a healthy breakfast to toddler, try not to scream back at her when she yells for a banana and then doesn’t actually eat it, leave the house in a kerfuffle and realize you forgot to eat breakfast.  

If you’re anything like me, you know that rushing out the door in the morning can leave you feeling haggard and hungry. In an attempt to make sure I eat breakfast before I leave the house each day, or at least have something ready to go in my lunchbox for my arrival to work, here are 10 of my favorite breakfasts that I can whip up – with my daughter on my hip – in 10 minutes or less!

Avocado Toast

Every food blogger’s fave – avocado toast! Whole grain bread lightly toasted is the foundation for this easy breakfast. Scoop out the insides of an avocado and top your toast with healthy fats and fiber. You can keep it simple with a sprinkle of sea salt or you can garnish with salsa verde for a truly mouth-watering experience.

 

Yogurt Parfait

With summer just around the corner, berries will soon be calling your name. Use your favorite fresh berries to make a yogurt parfait. Grab a mason jar and alternately add layers of yogurt, berries, and granola. Top with honey for a sweet addition to your protein-powered breakfast.

 

Green Smoothie

Not everyone is a salad eater, but salad for breakfast? Now that’s just crazy – unless of course there are bacon and eggs involved. Skip the breakfast salad and fill your life (and stomach) with healthy greens by putting together a quick green smoothie. Use frozen bananas for a base, throw in Greek yogurt or your favorite protein powder, and toss in greens, such as kale and spinach. Feel free to add some fresh fruit, if the “earthy” greens taste is too much for the early morn.

 

Breakfast Burrito

Scrambled eggs with salsa, cheddar cheese and chopped green onions get wrapped up in a wheat tortilla for a fast breakfast burrito. Wrap in foil if you’re on the run, so it stays warm as you hit the ground running. You can even make and freeze breakfast burritos in advance for a quick reheat in the AM.

 

Banana Nut Oatmeal

Bananas and nuts are a match made in heaven. Mix them both into your oatmeal and you’ve got a seriously delicious and nutritious breakfast. Nuke your oats in the microwave with water to start, and mix in some milk – whatever kind you fancy – to cool it down before serving. Add some cinnamon, bananas, and nuts and breakfast is served.

 

Banana & Almond Butter Toast

One of my personal favorite breakfasts ever – take whole wheat toast and spread with a thin layer of almond butter. Top with sliced banana, a drizzle of honey, and a sprinkle of cinnamon. If you’re feeling really crazy you can even sprinkle on some chia seeds, too! The healthy fat from the almond butter and potassium from the banana make for a perfect way to fuel your day.

 

Muesli

Muesli, though like oatmeal in many ways, is excellent when mixed with fruit juices, milk, or yogurt. Full of nuts, dried fruits, and often oats and/or wheat flakes, it’s a hearty start to your day. Add Greek yogurt to yours for a breakfast powered with protein that will keep you full well into the morning.

Hard-boiled Egg Sandwich

Hard-boiled eggs prepped over the weekend make breakfast a cinch all week. Toast a whole grain English muffin or bread, split it in half, brush with butter or top wish smashed avocado (Avocado Toast 2.0)  and top with sliced, hard-boiled eggs. Salt and pepper sprinkled on top complete the sandwich.

 

Cottage Cheese with Fresh Fruit and Nuts

Cottage cheese has an abundance of protein with an incredible 15g for a half cup of the low fat variety. This protein-packed food should definitely make your top 10 list of breakfast choices, especially when topped with fresh fruit and nuts, such as blackberries and cashews. No toddler will be able to stop you from throwing this together in less than 10 minutes.

Scrambled eggs are a healthy choice for quick mornings, and throw in some cheese and what’s not to love? These scrambled eggs are quick and taste delicious next to a slice of crusty bread.

Mornings may be hurried and chaotic, but that doesn’t mean your breakfast needs to suffer. Use these 10 breakfasts for a great meal in 10 minutes or less.

    Thanks so much, Kamila Rose! I’m fairly certain I have something from the list for breakfast every day – haha! Today, it was avocado toast with 1/5th of a hard boiled egg. 1/5th because my daughter picked off and ate the other 4/5ths of the egg while I was eating it. ^_^
